Jay Boehs Potato Pancakes

2 cups all-purpose flour 

I teaspoon salt

I teaspoon baking powder

I teaspoon baking soda

I 1/2 cups peeled and grated raw potatoes
(do this in the food processor) 
(( Jay uses hash browns. ))

2 large eggs, well beaten

2 cups buttermilk

Olive oil

 

Mix the flour, salt, and baking powder and soda together in a large mixing bowl. Add the potatoes and mix well. Add the eggs and mix well. Add the buttermilk and mix well. 

Generously coat the bottom of a large frying pan with olive oil and heat over a medium fire. Fry 4- to 5-inch pancakes until golden brown on both sides. 

Hint: Keep your raw peeled potatoes in cool water until you food-process them. Then mix them into the rest of the ingredients as quickly as possible to keep them from turning brown.

(Makes 6 servings.)
